Macedonia.

Most people probably haven’t even heard of the country Macedonia. I surely hadn’t until I met my boyfriend and he told me his father was working in Skopje, the capital of Macedonia. 

I honestly couldn’t even tell you where the country was on a map! But when my boyfriend’s father invited us to come stay with him for a week, I was intrigued and curious of what the country would be like.

I have to say that Macedonian food was delicious. Fresh mediterranean ingredients, seafood, feta cheese, and tons of different dips! They had two amazing vegetable spreads that I could not stop eating, one was a roasted eggplant dip and the other was roasted red bell pepper. I literally used them on everything from bread, cheese, meat, and fish!

Even though I’ll probably never go back to Macedonia, it was an enjoyable experience especially since I truly appreciated their cuisine.
